So, I ran across a sale on whole chickens a couple of weeks ago, and thought hmmmm I bet I can cook this in the pressure cooker.  Of course I researched several recipes, and came up with my own version of Pressure Cooker Chicken.

Wow, did it turn out great! So tender and moist.  It will fall off the bone, and melt in your mouth! Definitely another pressure cooker recipe I will be adding to the list of favorites.  Served it with green beans and corn, and mashed potatoes.  Delicious!!

Also, let me take a minute to say I love love love my pressure cooker!  Y’all, there are so many options for meals that can be cooked in a pressure cooker. I’ve made lasagna, many different types of soup, beans, chili, mac & cheese, potato salad, mashed potatoes, and the list goes on and on.  Stay tuned because one of these days I’m going to make a cheesecake in it!

Pressure Cooker Chicken

Ingredients

  • 1 whole 5 lb chicken
  • 1 tablespoon coconut oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 tablespoons lemon juice
  • 1 1/2 cups chicken broth
  • 5-6 cloves of garlic, peeled (or 2 tablespoons minced garlic)
  • 2-3 sprigs of fresh Rosemary (or 1 teaspoon dried)
  • 2-3 sprigs fresh Thyme (optional)

Instructions

  1. Combine paprika, dried thyme, salt, pepper, and cayenne pepper (optional) in a small bowl. Rub seasonings thoroughly onto the chicken.
  2.  Turn on pressure cooker. Any setting is fine for this step.  Leave lid off, and heat coconut oil. Add chicken breast side down, and cook for 6-7 minutes.
  3.  Flip chicken over, and add in lemon juice, chicken broth, and garlic.  Place sprigs of rosemary and thyme on top of chicken.
  4. Lock pressure cooker lid, and set on high for 30 minutes.  If your chicken is larger than 5lbs adjust your cooking time by adding 5-7 minutes per pound over 5lbs.
  5. Let the pressure release naturally.
  6. Remove from pressure cooker, and let stand for 5-10 minutes.
  7. Pair with your favorite sides, and enjoy!
