Quick & Easy Chicken Nachos

Chicken Nachos

Taco Tuesday We enjoy going to the Taco Tuesday gathering at Prohibition Drinks & Desserts here in New Bern every week.  It’s an evening full of delicious tacos, comradery among fellow boaters, lots of smiles and laughter, and maybe even a salty story or two.  My kind of Tuesday night for sure! Well, since we aren’t going this week (enter pouty faces here), I thought I would share a quick and easy Chicken Nachos recipe instead.  Wait a minute, scratch that!  We decided to go to Taco Tuesday tonight after all.  Yay!! …

Assembling and Installing Our New Mantus Anchor

Shawn and Our New Mantus Anchor installed on SV Banjo

Assembly and Installation of Our New Mantus Anchor A week ago, Shannon and I upgraded our anchor chain from 5/16″ G-43 High-Test to 3/8″ G-43 High-Test.  We also upgraded our windlass gypsy to the correct size for the new chain.  The only thing left was the anchor, and our ground tackle would be in great shape. A Rainy but Happy Monday at the Marina

Rainy Monday Morning

Happy Rainy Monday It’s a rainy, but happy Monday here at the marina.  The rain has set in again today, but the Banjo crew are troopers! The girls aren’t thrilled about the rain.  Luckily, they don’t have to be out in it too much today. Quick walks to do their business, then back to being lazy boat dogs. Thank you Captain for taking them out this morning! Have a great day everyone and stay dry!   Be sure to check out our other posts, or connect with us on Facebook,…

Pressure Cooker Chicken

Pressure Cooker Chicken

A Whole Chicken & A Pressure Cooker So, I ran across a sale on whole chickens a couple of weeks ago, and thought hmmmm I bet I can cook this in the pressure cooker.  Of course I researched several recipes, and came up with my own version of Pressure Cooker Chicken. Wow, did it turn out great! So tender and moist.  It will fall off the bone, and melt in your mouth! Definitely another pressure cooker recipe I will be adding to the list of favorites.  Served it with green…

New Anchor Chain, Windlass Upgrade and Mantus Anchor Purchase

Anchor Chain, Windlass Upgrade and Mantus Anchor Purchase In this post, we are going to walk through the steps of performing our anchor chain, windlass upgrade and Mantus Anchor Purchase.  After we purchased Banjo, we saw that a portion of our anchor chain was rusty and needed to be replaced.  We decided, if we were going to replace the existing chain, that we would go ahead and upgrade the chain size at the same time.  Our previous chain consisted of 200-feet of 5/16-inch High-Test G-43.  We made a call to…
